NOSH is a restaurant that has perfectly filled a culinary niche that many in Truro didn’t even realise was missing! Their menu excites customers by combining classic ingredients to create delicious and unique flavours. Some customers wonder what NOSH stands for, Jason always replies that it means “to eat”.

Some of their featured menu items include pulled pork mac and cheese wrap, flaming hot chicken cheeto wrap, and their various bowls! Don’t forget, however, that NOSH serves breakfast sandwiches as well as coffee; iced or hot!

Jason Conway has had an inspiring journey in his career that led up to creating NOSH! It first started with a Bistro in New Glasgow, which is where he lives. Many in the community enjoyed his food which led people to ask him to cater for varied events. From pharmaceutical companies to weddings to corporate events, J Conway Catering is still going strong!

Before the pandemic, Jason started a food truck business called “Fork in the Road” , it doubled as a mobile kitchen which comes in handy for catering! Even though Covid-19 dampened business for a while, as did a lot of small businesses, he was determined to push through. The food truck was convenient as social distancing and being outside allowed for great business in the warmer months.

After having a restaurant in the New Glasgow mall for a while, Jason decided he wanted a change in location. He jumped at the opportunity to have NOSH at the Truro Mall for a while before settling down on Prince Street! 

Jason emphasises to both his family and staff, as well as aspiring entrepreneurs, the importance of believing in opportunities and trusting their instincts when a promising chance comes their way. Jason also underscores the importance of surrounding yourself with supportive and uplifting individuals. Being around negativity and regret can stomp on your dreams. While having dreams is crucial, maintaining a realistic mindset is equally important. For instance, it’s wise not to launch a business that’s too large too quickly; instead, allow time to work its course.
